Description:
Croque Madame is a delicious French specialty composed of a toasted ham-and-cheese sandwich topped with a fried egg. The national grilled cheese sandwich for the French is the Croque Monsieur, which is the same thing but without the egg. |

Preparation:
Cook the bacon until it becomes slightly crispy. Toast the sandwich until golden. Spread the bread with butter. Melt the cheese by placing it under the grill. Add few slices of tomato and bacon, and bake for 5 minutes. In the meantime, pan-fry the eggs one at a time. Serve right away with the eggs on the top of the Croques! |
