Fresh Fruit Salad in Basil Syrup

Ingredients:

Syrup:
4 cups water
1½ cups of sugar
1 lemon zest, blanched
Fruit:
8 large basil leaves, chopped
2 peaches, sliced
3 oranges, segmented
1 pink grapefruit, segmented
½ cup of red grapes, split in ½
½ cup green grapes, split in ½
1 mango, cut in cubes
1 papaya, cut in cubes
3 apricots, sliced
2 red plums, sliced
12 strawberries
2 bananas, sliced
12 fresh leeches, pitted

Description:

A delicious fresh fruit salad, refreshing and tasty, perfect for a brunch.

Preparation:

Make the syrup:
In a pot, combine sugar, water and lemon zest. Simmer for 10 minutes. Then cool on an ice bath and set aside in a large bowl.

Cut all ingredients one at the time and add them to the syrup. Then gently mix all other ingredients, store in the refrigerator.

Notes:

Hints and tips:
Even if this dish is cold and could be prepared in advance, it must not be prepared too long ahead because the fruit would not look and taste so fresh. Of course, put any fruit you would like, but the basics rules are:

Balance flavors, some sweet, some sour, and some bitter
To vary colors as much as possible you need red, green, white, yellow and orange.
