Preparation:
Preparing the chicken: Rinse and pat dry chicken. Trim out excess fat and cut the chicken breasts into ¼ inch slices. Preheat oven to 450°F. Cover baking sheet with heavy-duty aluminum foil. Sprinkle with ¼ teaspoon salt and pepper. Heat olive oil in a large skillet on medium to high heat. Add chicken and sauté for 2 minutes, or until exterior is no longer pink. Remove chicken from pan with slotted spoon. Add onions and mushrooms to the pan and sprinkle with remaining ¼ teaspoon salt. Sauté for 3 minutes or until the onions are translucent. Remove from heat. Return chicken to pan. Add barbecue sauce over the chicken and vegetable mixture. Bake the pizza: Place pizza crust on baking sheet. Arrange half of the cheese on the pizza crust. Top with chicken mixture and remaining cheese. Bake at 450°F for 10 to 12 minutes, or until the crust is crispy and the cheese is melted. Let stand for 3 minutes before cutting. |
