Preparation:
Wash and boil the potatoes in lightly salted water for about 20 minutes or until done. Refresh under cold running water, peel, and cut into slices and reserve. In a large pan, bring to a boil cider and vinegar; add potatoes and seasoning and turn off the heat. Let the flavors infuse the potatoes more about 10 minutes. Cut the cheese in cubes and add it to the potatoes, sprinkle chives on top and serve into a salad dish. |
