Description:
One of my favorite sauces, this one goes particularly well with poultry, guinea fowl, pork and duck. |

Preparation:
Melt the butter in a heavy, 2-quart saucepan over low heat. Add the shallot and sweat for 2 minutes on low heat. Deglaze with wine and add the tarragon, simmer and reduce by half. Add the stock, simmer on medium heat and reduce by 25%. Skim off the surface, few times. Add the Dijon mustard, cream, salt and pepper to taste. Use a whisk to incorporate the ingredients. Taste and rectify seasoning, finish the sauce away from the heat, whisking the cold butter. This is what we call " monter au beurre". The sauce goes particularly well with poultry, guinea fowl, pork and duck. |
