Gravlax | ||
A Swedish specialty made with raw salmon that has been cured in a world- renowned mixture of salt-sugar-dill. Sliced paper-thin and served either on dark bread as an appetizer, on an open-faced sandwich or as part of a smorgasbord, with dill-mustard sauce on the side, Gravlax can normally be found in gourmet markets or specialty fish markets. It can be stored for up to a week in the refrigerator, if tightly wrapped. Whole salmon fillets cured with salt, sugar and pepper, and then flavored with dill are sliced paper thin and served with pumpernickel bread, sour cream, capers, onion and lemon. |
