 Also known as whipping cream, is a rich dairy product with a butterfat content of at least 36 percent. For the best flavor and cooking properties, buy 100 percent natural fresh cream with a short shelf life printed on the carton; avoid long-lasting varieties that have been processed by ultra heat methods. Heavy cream is also known as double cream. |
