Description:
A very good apple tart! This delicacy can be baked just before serving. |

Preparation:
Prepare the puff pastry dough. Roll out the dough and prick it with a fork. Use a stencil with a circle 6 inches in diameter (you may use a plate or a small bowl as a stencil). Place the stencil on the dough, and cut the dough to make 8 disks. Place on a tray and cool for 15 minutes. Brush the disks with melted butter, and then sprinkle with brown sugar. Peel, halve, and core the apples. Slice finely in regular slices; arrange apples in rosettes on the bottom of the dough. Brush the top of the apples with melted butter, sprinkle with brown sugar, and add a knob of cold butter in the center. The dough will rise slightly and the apples will begin to caramelize. |
