For a perfect dessert after a spicy meal, try this delicious cake from the Caribbean.

Heat oven:
Pre-heat the oven to 350° F.

Mix and blend:
Bring the raisins to a boil in the rum. Melt the butter, add the sugar, beat in the eggs and then add the mashed bananas. Gradually add the sifted flour, the baking powder, the salt, and the baking soda. Beat them together to blend.

Add the walnuts, raisins, rum, and vanilla. Place into the loaf pan and bake for around 75 minutes. Insert a fine skewer to test if the center is cooked. Take out and leave to cool on a wire rack. Serve the Banana, Walnut, Rum & Raisin Cake when cold.
