Preparation:
Prepare the Rougail: In a medium size bowl mix well all prepared ingredients. (Diced tomatoes, zest and limejuice, white of green onions, diced zucchini, chopped garlic, mint leaves, basil leaves, olive oil, rock salt and freshly ground pepper). Cover with plastic wrap and reserve in refrigerator. Prepare Clafoutis batter: Preheat the oven 425°F. In a medium size bowl, whisk together the eggs, flour, whipping cream, milk, curry powder, green onions, chopped seeded red chili, salt and pepper mill. Taste and adjust seasoning if desired. Butter four ovenproof gratin dishes. Divide the crab equally on the bottom of the dishes. Ad 6 cherry tomatoes, stems side up, if they still have it. Cook the Clafoutis: Ladle slowly Clafoutis batter into the dishes. Bake for 20 to 25 minutes or until cooked and golden brown. Remove from oven, let cool down and serve with the Rougail on the side. Decorate with extra mint or basil leaves. |
