Noilly Prat is one of the most different vermouth available on the market. A vermouth is a wine or blend of wines that are aromatized with spices and/or fruits. Each company keeps its recipe secret to keep their uniqueness.

Two Local Wines For a Great Vermouth

The Noilly Prat factory is located in the village of Marseillan, on the edge of the Thau region, by the Mediterranean Sea. Noilly Prat uses two local varities of wines:

Picpoul de Pinet Piquepoul is an ancient grape that gives dry and fruity white wines.They are clear and of a straw color.
Clairette blanche du Languedoc

Clairette blanche produces robust and full-bodied wines with a fresh, fruity character with aromas of dried fruits, aniseed and almonds.

Open Air Ageing

Barrels of Noilly PratFor eight months, both wines are matured separately in large oak casks before being transferred to oak barrels. The next step is unique to Noilly Prat. The barrels are left outside for a year. The wines are going through a natural transformation left to the good will of the climatic elements: the burning summer sun, the "cers"(strong local wind) which can be very cold , the short but heavy rain.

A Subtle Blend and a Secret Recipe

A secret blendThe two wines are eventually blended together before the Maître de Chai (cellar master) adds a dash of muscat mistelle (grape juice and alcohol) and a tiny dash of fruit essence (raspberries and lemons). From then on, a secret list of around twenty different plants and spices are added by hand each day for three weeks. The plants and spices are left to macerate into the wine to defuse their perfumes and strength.

The Noilly Prat goes through a long process concluded by filtering before being bottled and commercialized worldwide. Every step is closely monitored to guarantee the consistency of the product.

Joseph NoillyObserving that wines who traveled on the deck of the boats underwent a transformation that made them fuller and their color more amber, Joseph Noilly decided to recreate this natural process. It was in 1813, that he developed the first formula for dry French vermouth. In 1855, his son Louis Noilly joined together with his son-in-law Claudius Prat, to form the company that became Noilly Prat.
