Preparation:
Preheat oven to 475°F. Season the chicken legs. Put them in a shallow cast iron casserole or roasting pan with the bacon, bay leaves, unpeeled garlic, juniper berries, and beer. Cook in the oven for 20 minutes, and then reduce the oven temperature to 350°F. Turn the chicken over and cook another 20 minutes. Turn again, baste with the juice, and cook for a further 20 minutes. At this point, the chicken should be dark brown and the garlic very soft. Remove the chicken to a serving platter and keep warm. Discard most of the fat, squeeze the garlic out into the remaining sauce and mix. Put the casserole over high heat to bring the juice to a boil, taste and rectify the seasoning if necessary. Strain into a saucepan and off the heat stir in the cold butter. |

The brewery tradition of Ackerland:
The Meteor brewery is located in Hochfelden, small city of Ackerland, an undulating agricultural area, which extends between Strasbourg and Saverne. The brewery activity profits there from the exceptional quality of the Vosgean water. In 870 for the first time beer manufacture in Hochfelden was mentioned in records. In 1640, Jean Klein installed the brewery in its current site. In 1898, the Haag family took over and still manages the brewery today. The 1950s are the decade of development, carried by the increasing vogue of the label "Alsace." Production of 100 000 hectoliters was reached in 1956, that of the 200 000 in 1966, the 300 000 are reached in 1982, the 400 000 in 1990 and the 500 000 in 2004. Whereas more than 70 breweries disappeared since the First World War or were taken over by larger groups, the Meteor brewery disproved the logic of the concentration. This independent family brewery founded its development on quality and creativity. The Meteor Brewery is one of the oldest in the world. |
